SPANISH LENTIL SOUP

Is for you that read me in English that I wrote this recipe, it is very common when Autumn weather arrives here we use to cook this typicall soup that involves a lot of magnificent nutrients. Lentils combined with rice forms a whole complete vegetal protein, and green pepper helps to absorb the iron that lentils has in it, the recipe is very rich only by the vegetables by it self, but you can add also jamón serrano, hueso de jamón y chorizo, as we do in Spain.

 Ingredients Vegetarian way
-1 glass of lentils pre hidrated the night before (it doubles its sizes)
-2 carrots
-1/2 red pepper
-1 green peper
-1/2 onion
-2 brunches of celery
-2 bay leaf
-salt 
-pepper
-garlic clove
-1/2 tablespoon paprika
 


Ingredients Spanish way
 
-1 glass of lentils pre hidrated the night before (it doubles its sizes)
-2 carrots
-1/2 red pepper
-1 green peper
-1/2 onion
-2 brunches of celery
-2 bay leaf
-1/4 chorizo
-1 bone of jamon serrano
-100 gr of jamón serrano sliced as you see
-salt 
-pepper
 

Recipe 

You first has to rehydrate the lentils, so you have to put a glass full of lentils into a bowl with at least three glass of water for 12 hours. Then, in the morning you wash your lentils and prepare to chop!
All the vegetables you have in the recipe must be chopped, but the bay leaf, but if you are lazy you can skip the carrots and the onion, but the peppers.... ah! thats not as easy ;) When you have everything prepared you pour all the ingredients into a cooking pot and covers it whith cold water, as you see in the picture. And it is very important to put cold water, if you put mild the lentils will desintegrate by the end of the boiling. I boil the soup for about two hours in low heat, but you can do it in a pressure cooker for 20 minutes.
The last step is to fry one garlic clove into olive oil till golden and then switch off the heat and add half a spoon of paprika, then add it to the soup. ( For a tasty touch )

If you are a brave one and you want the Spanish version of it, just throw into the water the jamón and chorizo with the bone, and if you are super brave, try the garlic end to the soup.

I hope you like it, it is a very complete recipe and you can add ingredients to complete it, at home we boil rice and add it to the soup, and also you can boil potato with all the ingredients but instead you can not freeze it.
